Guadalajara, October 4, 2026 - The Government of Castilla-La Mancha has introduced the 'Gastro Culinary Experience: Heritage Gastronomic Route' in Guadalajara, an initiative designed to combine gastronomy, heritage, and tourism. This program aims to provide a unique way to explore the region through its flavors and some of the city's most significant historical and cultural sites.
The event was attended by Arantxa Pérez Gil, the General Director of Tourism, along with Juan Luis Pajares, President of the Provincial Federation of Tourism and Hospitality of Guadalajara, Susana Blas, the provincial delegate for Economy, Enterprises, and Employment, and other municipal officials. The event was fully booked, attracting over 300 participants who visited five locations in Guadalajara, where they experienced and tasted culinary offerings from each of the five provinces of Castilla-La Mancha.
Pérez Gil explained that this initiative is linked to the Culinary Congress, traditionally held in Cuenca, and this year the regional government decided to extend it across Castilla-La Mancha. “We thought, why not bring these Gastro Experiences to the rest of the provinces?” she stated, emphasizing that this format allows participants to discover emblematic and heritage sites while enjoying the region's rich and varied gastronomy.
Five provinces through five spaces and culinary offerings
The route guided participants through five heritage sites in Guadalajara, connecting each with a dish from a different province of Castilla-La Mancha. Each visit included a showcooking demonstration followed by tastings. For instance, the province of Guadalajara was represented at the Palacio de la Cotilla by the restaurant Biosfera, which served a roe deer sandwich with mead barbecue. Meanwhile, El Sueño de Jemik from La Roda showcased Albacete's cuisine at the Palacio del Infantado with a cod brandade accompanied by piquillo cream and prawns.
Toledo's culinary offering, presented by Cuchara de Palo, was available at the Convento de la Piedad, featuring a partridge brandade cannelloni with black olives. The cuisine from Cuenca was represented by La Hospedería del Provencio at the Francisco Sobrino Museum, serving a swordfish tournedó with escabeche, forum, and Manchego roasted vegetables. Lastly, El Mirador de La Mancha represented Ciudad Real at the Mudejar apse of the Church of San Gil with a Manchego gilda featuring pickled partridge and a cream of pines beans. The experience concluded at the Mercado de Abastos with tastings of desserts from all five provinces.
Pérez Gil highlighted that this format successfully combines culture, heritage, and gastronomy, making cuisine a gateway to the territory while enhancing the understanding of its historical and cultural resources. She noted the excellent response in Guadalajara, where all available tickets were sold, and expressed hope that the initiative will continue to be well-received in future events.
Expanding the initiative across Castilla-La Mancha
The Gastro Culinary Experience, promoted by the Government of Castilla-La Mancha through the public company Eturia, is developed in collaboration with the Regional Federation of Hospitality and Tourism Entrepreneurs of Castilla-La Mancha and its provincial organizations. Following the events in Albacete and Guadalajara, the initiative will continue next weekend in Ciudad Real, then move to Cuenca, coinciding with the Culinary Congress on October 19, and conclude on the 25th in Toledo.
Juan Luis Pajares, President of the Provincial Federation of Tourism and Hospitality of Guadalajara, emphasized the appeal of this proposal, which allows for a unique appreciation of heritage by combining visits to historical and artistic sites with tastings from various parts of Castilla-La Mancha. He also pointed out the potential of gastronomy to spark interest in other areas of the region, suggesting that tasting products and dishes from different provinces may encourage visitors to explore those places further. Participants in the Guadalajara experience may discover the region's culinary offerings and find new reasons to visit the province.
The organization of the event in Guadalajara received support from the City Council, which provided municipal spaces for the activity.
